
Salchichón Sarta, dry-cured

A salchichón is not a chorizo: there is no paprika here. It is seasoned with a blend of peppers, which is why the slice comes out pale rather than red. Same horseshoe as the chorizo, the slim piece you put on the board whole. Sliced very thin, it is the aperitif piece: it goes on the table and it does not last long.

Hortanco began as a family butcher's shop in Tafalla. In the late nineteen-seventies the house built its own factory, and the first two sausages hung up to cure there were the chorizo cular and the chorizo sarta. Both are still made. Both are in this selection.
