Chorizo and salchichón cular from Embutidos Hortanco in Tafalla (Navarre): large pieces of coarsely chopped lean pork and belly, cured for at least 50 days. On the side, olives stuffed with chorizo and chorizo-flavoured crisps from Plaza del Sol.
